Italian Potato Salad

What you need

  • 6 medium potatoes
  • 1/3 cup Heart Shape Culinary Pure Flax Oil
  • 1/3 cup white wine vinegar
  • 2 tbsp sliced green onion
  • 2 tbsp snipped parsley
  • 1 teaspoon salt

Make it
Cook potatoes in enough boiling salted water to cover for 25-30 minutes or just till tender; drain. Peel warm potatoes; cut into ½ inch cubes. In screw-top jar combine Heart Shape Culinary Pure Flax Oil, vinegar, green onion, parsley and salt; cover and shake well. Pour vinegar mixture over warm potatoes, tossing gently to coat. Cover and refrigerate several hours or overnight, stirring occasionally.
