Bran Quick Bread

What you need

  • 2 cups Royal Harvest Pure Flax Meal
  • 1 cup Whole Wheat Flour
  • 1 cup all purpose flour
  • 1 tsp salt
  • 2 tsp baking soda
  • 4 egg whites or 2 eggs
  • Grated peel from 2 lemons (save lemons for juice)
  • ½ cup raw honey or sugar
  • 2 cups either raisins, prunes or dates (soak ahead a few minutes: drain)
  • Squeeze lemons for juice, adding enough buttermilk to yield 1½ cups liquid.

Make it
Preheat oven to 325 F. Combine ingredients in descending order and mix thoroughly. Bake in 6 lightly buttered, small loaf pans (3″ x 7″) for 40 minutes at 325 F.

Servings: Makes 6 small loaves.
