What you need
- 2 cups Royal Harvest Pure Flax Meal
- 1 cup Whole Wheat Flour
- 1 cup all purpose flour
- 1 tsp salt
- 2 tsp baking soda
- 4 egg whites or 2 eggs
- Grated peel from 2 lemons (save lemons for juice)
- ½ cup raw honey or sugar
- 2 cups either raisins, prunes or dates (soak ahead a few minutes: drain)
- Squeeze lemons for juice, adding enough buttermilk to yield 1½ cups liquid.
Preheat oven to 325 F. Combine ingredients in descending order and mix thoroughly. Bake in 6 lightly buttered, small loaf pans (3″ x 7″) for 40 minutes at 325 F.
